We discovered Swai at our local grocery store several months ago and have made it a staple of our diet.  My husband is from the south, loves catfish, and this is even more mild and versatile.
I watched the podcast of the Swai with a tomato buerre blanc - looks yummy!

I've recently come into a piece of kangaroo and alligator. Not really big pieces, but I'm sort of clueless on what to do with them, or even how to go about cooking them. Anyone with any experiences with these proteins care to chime in?

I'm just going to post this here since no one else seems to be using the other forums. A while back I mentioned my desire to try and convert the noknead philosophy into a sandwich loaf. I've been trying and coming up with some delicious results, but they all have the same common problem. The no knead sandwich bread tends to have a little bit looser a of a crumb even when it's mixed fairly well and handled more than no need typically should be, it still comes out a little loose, and falls apart from the cut.

Last weekend during a slammed dinner, I opened our reach in door.  Magically, the top hinge came off and the top of the door found its way on to the top of my skull.  After trying to shake it off and grabbing my product, I felt confused and nauseous.  I looked at our tickets and completely forgot about the other sautee's I had cooking.  At this point it was a very real reality I gave myself one hell of a concussion.  I felt like that poor girl getting drenched in hot oil on those public access commercials.

Hey all, I'm wondering if anyone has any experience with the Kirkland (Costco) Stainless Steel Cookware set here. I'm seriously wanting to move to stainless and I love the feel of these but I'm not sure about the characteristics of cookware with a capsule bottom vs.

Anyone? I have 4 lodge pots/pans, so I know they're good. It's more of a question about cast iron loaf pans in general. I'm looking for sandwich loafs. I have a calphalon nonstick right now, meh. It's ok, i really don't love it, but it's not bad. The crust on my sandwich bread is a little crumbly. Not sure if that's something that a different material would resolve. Anyone care to weigh in?
